Mississippi Caviar
 

1 bunch green onions - washed & chopped
1 bunch cilantro - chopped
1 green bell pepper - chopped
1 - 2 avacados - chopped
2 large tomatoes - chopped and seeded
1 regular can black eye peas - drained
1 small can white corn - drained
1 small can diced green chilis
1 small bottle Italian dressing
salt and pepper to taste

Mix all ingredients together.  Pour approximately 3/4 of the Italian dressing over all.  Add salt and pepper.  Stir well. Serve with plain tortilla chips.  Best if allowed to chill 4 hours in advance of serving to allow the flavors to blend.
